The Watson sits just off Main Street, occupying a former industrial space that reflects Mount Pleasant’s working past while leaning comfortably into its present. The room is long and understated, with exposed brick, warm wood and a bar that anchors the space without dominating it. It feels adaptable by design, equally suited to an early drink, a full dinner or a late-night return visit.
The cocktail program leans classic with personality. Drinks are approachable but carefully built, favouring balance and drinkability over flash. A standout is the Watson Margarita, which swaps standard proportions for a softer citrus profile and a clean tequila backbone, making it one of the most consistently ordered drinks in the room. Another house favourite is the Cucumber Collins, light and refreshing with fresh cucumber and gin, often cited as an easy repeat order.
